A Taste of Italy: Summer Caprese Salad

Numerous studies have shown that the Mediterranean diet – one that is rich in fresh, plant-based foods, olive oil, herbs/species, and more – has significant benefits for the heart. But the use of high quality, fresh ingredients may also provide you with a more enjoyable eating experience. According to Mireille Guiliano, author of French Women Don’t Get Fat, eating fresh, high quality foods, especially those that are in season, can result in eating smaller portions yielding a higher flavor satisfaction. And to maximize eating pleasure, she advises working with foods that taste as good as they look.

So is the case with the Italian favorite – Insalata Caprese or the Caprese Salad. This salad, named for the island of Capri off the coast of Italy, yields amazing flavors with minimal ingredients. And how it is assembled and presented may be nearly as important as the ingredients.

To make, layer 3 thick slices of a large, fresh tomato, with 3 thick slices buffalo mozzarella, making a small tomato/cheese tower. Drizzle 1-2 teaspoons of olive oil and 2 tablespoons of quality balsamic vinegar over the salad and finish with thinly-sliced pieces of fresh basil – salt and pepper to taste.

A pure and simple Mediterranean summer salad that offers a savory pop of color and taste!
